Chicken and Vegetable Lettuce Bundles

It’s Friday and that means I’ll be joining my friends for Fiesta Friday!  It’s getting warmer out there, so lately I’ve been wanting lighter meals with lots of crispy and refreshing vegetables.  Being short on time, I thought the perfect thing to make would be some Chicken and Vegetable Lettuce Bundles.

Chicken and Vegetable Lettuce Bundles

This meal is really easy to put together. I used leftover roasted chicken and fresh vegetables. My Chicken and Vegetable Lettuce Bundles include carrots, cucumber, sweet red bell pepper, green onion, cilantro and chopped peanuts.  I plan on serving this with Hoisin sauce, but it would also be delicious with the peanut butter dressing in this recipe.

Chicken and Vegetable Lettuce Bundles

  • Servings: 4
  • Time: 25 minutes
  • Difficulty: easy

Ingredients:

  • 1 whole breast of a roasted chicken (you can use dark chicken meat as well)
  • 1 head of Boston lettuce
  • 2 medium carrots
  • 1/2 medium red bell pepper
  • 1/4 of an English cucumber
  • 2 green onions
  • 1/2 cup Hoisin sauce, more to taste
  • 1/2 cup of cilantro (optional)
  • 1/2 cup roughly chopped peanuts (optional)

Directions:

Reheat leftover roasted chicken breast and chopped it. Wash lettuce and separate the leaves, set aside.  Wash and thinly slice all vegetables into slivers.

Set the lettuce leaves, all sliced vegetables and cilantro on a tray.  Place the chicken on a separate plate. Put Hoisin sauce and chopped peanuts into bowls.

Let people make their own bundles by spooning ingredients onto lettuce leaves, sprinkling with chopped peanuts and topping with Hoisin sauce.

      These are really healthy, as long as you don’t over do it with the Hoisin sauce, that stuff is so good :)

      Thanks Myrna! They are really good, taste a lot like the Vietnamese salad rolls, but without the noodles.

    Loved your post (short and sweet)! I love Boston Lettuce for all things wrapped. I eat a lot of lettuce wraps because I have celiac disease, but this looks like a great way to spice up my meals! I love your presentation as well. Have a wonderful weekend, and Happy Fiesta Friday! :D
